Noor Mahal Biryani

2 cup basmati rice
2 tsp mix spices (gram masala)
4 tbsp cooking oil
2½ cup water or chicken soup
1 bay leaf
Salt to taste
3 pieces of cinnamon
½ cup cheese
6 cloves
3 1/3 milk or cream
2/3 tsp cumin seeds
1 gm saffron
8 green cardamoms
2 tsp spinach juice
10 pepper corns
2 tbsp butter
¼ cup of chopped onion
2/3 mace powder
2 ½ tsp garlic paste
2 tsp chopped green coriander


  • Wash the rice and put them in water for half an hour.
  • Then heat the cooking oil, add bay leaves, cinnamon, cloves, cumin seeds, green cardamom, and black pepper and fry all of these spices on a low flame.
  • Add garlic and ginger paste, gram masala and fry it for 30 – 40 seconds.
  • Add rice, cook it for 4 – 5 minutes on a medium flame, and add chicken soup or water in it. Once there is a boil in the water add salt and let it cook on medium flame until the water is dry.
  • While the rice cook, smash the cheese into a fine paste and add salt and 10 ml of milk or cream to it. Divide this mixture in three portions, add 10 ml milk and saffron in one part and spinach juice in 2nd part while the third portions remains as it.
  • Make balls of this mixture and fry them in cooking oil. These balls are called as “Noor Mahal” to which the name of the dish goes.
  • Mix the remaining milk/cream and mace powder together and put aside.
  • When the rice is done, take them out the rice in a dish and put the top it with the cheese balls and coriander we had prepared and serve while hot.
